Its the Weekend! Lets have a Party

Alex was in town for the first time in weeks, since his summer job is in Cincinnati. So we decided to call it a stay cation.

We didn't make any plans. Just made it up as the day went. We went out to breakfast. We went to the pool. And we cooked. It was relaxing to just be home.

We wanted to use my new grill so at least 1 of the food items had to be grilled.
On the Menu
- Skinny poolside dip - Appetizer
- Sangria - Drink
- Grilled Corn on the Cob - Side Dish
- Cucumber Tomato Onion Salad - Side Dish
- Best Burger Ever - Entree

Skinny Pool Side Dip
This is the skinny poolside dip stolen from pinterest. For a fat free dip, it still had a lot of flavor and good crunch. I served with reduced fat wheat thins. I think its truly a guilt free snack.

Mix Together
1 Red Pepper, 2 Jalepenos (unseeded), 1 can of corn, 1/2 can died olives, 16 oz fat free cream cheese (softend), and 1 packet Hidden Valley Ranch dip seasoning mix.
Serve with crackers
 Sangria
Incredible. Simply Amazing. I followed the linked recipe to a T except for the fruit. I squeezed some lime juice into it and added lemons, strawberries and raspberries. OMG its so good. Will be making this again. 

Grilled Corn on the Cob
 Step 1 - Soak in Water for 30 mins
 Step 2 - Grill, we did it a medium ish, but my grill is cheap so I can't tell you the temperature.
 Step 3 - Grill, turning around various amounts of time. We didn't want to ruin it so we gave these a lot of attention. Cooked for about 15-18 mins.
Step 4 - Put in brown paper bag and roll shut. Cook other things. The steam and the heat in the bag will cook it more. 

Turned out perfect. 

Cucumber Tomato and Onion Salad
I coulda swore I took a picture of this but I guess I didn't. It looks like the picture on the recipe. Its pretty basic. Though next time ill prolly double or tripple the dressing. 2 TBSP of sauce is just not enough. 

Best Burger Ever
So I don't want to steal credit here. This is something I found on pinterest. But it is in fact delicious. 
 Mix these things with ground meat. We used venison, cause I had it, so it was free.
 Make patties. We tried to make them big, so they wouldn't get to dense when cooked.

Cooked burger. On bun. With sauce. Avocado. Lettuce.

oh my it was a tasty dinner.

I'm Back

Hey Blog
   Long time no see. Life happens fast and somehow a few months got away from me. I am working on improving and honing in the content of my blog. I don't know what the goal of this thing is besides being an outlet for myself.

   Don't worry you haven't missed anything. Work is the same. Boyfriend is the same (and gets better everyday). Boomer is still hanging out. School is done. Hobbies are abundant.

    Recently I am made a few knitted creations.

Pizza A La Katie

Things I am thinking about
1) Living alone is dangerous when you have no self control with your own diet. No one will stop me, look at me funny, work out and make me feel bad or even know - if I decide to eat...ALOT. No one will know. And that is dangerous.
2) I have a headache. All. The. Time.
3) I need to not be in school. So I can focus on me. What makes me happy. What makes me feel good. Without having ANYTHING hanging over my head. Approximately 2.5 weeks till I am free from the guilty, stressful, worrying world of school.

This is what I ate on Friday Night. Pizza a la Katie
I love...
1) chef boy r d pizza
2) Seasoned sauce

 3) Sauteed Onions Mushrooms and garlic
 
4) Pepperoni, green pepper, no olives yuck, and lots of cheese
 5) 312 - yum 
 6) Fire
 7) OMG So good

Then 
On Saturday
I went to Cleveland
 Notice me trying to not look like I have been drinking...wide eyes...happens. I'm old enough.
 Yes that's right I went to the House of Blues in Cleveland. I feel so cool and edgy. Cool people go to Cleveland. Cool people go to house of blues. That night I was a cool people.
 Extra cool. We saw Gaelic Storm. I wish I was Irish. They are happy friendly people.
The fiddle player was by far the coolest. I was mesmerized. I wish I was good at something like that. 

Then on Sunday. I came home. 
I cleaned up my apartment. Did laundry. Made 5 ingredient soup
 Added cheese and sour cream. Unncessary ingredients. But quite tasty.

Then I made Donut Muffins. I pinned them to pinterest so you can get the recipe from there. 
Speaking from experience. They taste more like donuts the second day. I don't know why. 

My headache ensues. 
Its time for me to go.

February

Happy February!
I can't believe its been so long since I blogged. A LOT has happened since my last post.

First - I had a birthday!


We celebrated with Dewey's pizza (same thing as last year) nom nom nom

Great beer and even better pizza. Green lantern is my absolute favorite - pesto and red sauce and goat cheese are the most notable ingredients.

I also moved from my quaint little apartment. No more apartment B5.
Hello double the square feet, and a craft room, and a walk in closet, and balcony, and just way more space in general. Once I get it all put together there will be pictures to follow, its kinda a mess right now. 

The newest edition to my furniture collections are this adorable day bed. You can fold down the sides in all different ways and it makes a perfect edition to my craft room. 
 For my birthday Alex got me all the stuff I need for fire. The poker sticks, the holder, the screen the wood and fire starters. Its so much fun having your own fireplace, it feels so homey.
 Pardon the computer and the socks. But notice my new table! Its so pretty. It has a leaf. I never had a leaf before.
So far I think boomer likes it. He lays around just as much as before, for dogs I think that is a good sign.
Well it seems I have run out of things to say as I have been staring both aimlessly and intently at the television for like 15 minutes.

I Love Weekends

Is there anything better than a weekend. Nothing is better than a whole two days (three if your luck) to do whatever you want! Working professionally really makes you appreciate you own special time to do you own thing. I think my boss is hinting at me doing more work and training on my own time. I think about work enough as it is, and I need my weekends to refresh.  

This weekend that is what I did. It was so much fun. First I made this tasty dish. From my light cooking book. It contains Spaghetti, Cherry Tomatoes, Shrimp, Onion, Garlic, Pesto and shaved real Parmesan. Nom Nom Nom. I ate it all. :-) 

Then Alex and I went and saw Sherlock Holmes. Loved it! Super fun movie. Its so funny and exciting. Just something that makes you feel good.

The next morning Alex had to leave early to go this volunteer tax thing he is doing. After walking the dog I went back to bed...and slept till 11:30! Who knew I was so tired. After lounging around, and doing my workout video I made a Katie Classic.

Below you will see the Katie Burrito. Yum. There are lots of ways to vary it. At min you need a tortilla shell, re fried beans and some salsa. It is obviously improved by cheese (i used fat free this time), and avocado slices but pre made guacamole is much better, some sliced tomatoes to top it. Roll it up. See it explode out the sides. Nom Nom Nom.

Saturday evening we went to visit Alex's sister in Beavercreek. Their kids school was having a fundraiser for the adults - Beer Tasting. It was so much fun. You walk in give them you tickets and they put a pink X on your hand. You hang your coat in the coat area and the gym is decorated with low lighting and playing music. Hello...very reminiscent of middle school dance aye? It was super fun anyways.


There was even a 50/50 raffle. They were raffling off three prize baskets and half the ticket proceeds. As I am sure you guess from the photo, I WON. Alex and Dusty (his sister's husband) were joking when the tickets started to be called how funny it would be if I won a very parent specific prize. Luckily this basket was full or beer labeled glasses, beer openers, beer bumber stickers and beer t shirts. Super cool! I am so excited.


Next I am going to break my cardinal rule or blog. Post a picture of me and boyfriend Alex. It was such a cute picture I wanted to post it. We haven't been taking photos lately so its nice to have a new one. 
The next thing I am going to show you is from my new past time. Pinterest. Click here to see my posts. This tasty dish below is something I saw. Call it what you want but its definitely in the Mexican food family to me, Mexican cream cheese chicken perhaps. Super yummy. It starts like this...contains cream cheese, chicken, salsa, black beans, and corn.
Then it looks like this. I served it over brown rice. Super yummy. Next time I think I will add more of something. More veggies perhaps? Peppers and onions? Either way it turned out great. And thickens if you let is set.
