Apple Pie in a Jar

I am obsessed with the pies in jar's thing. Probably from the illusion that its healthier cause its small. They are sooo easy to make. I didn't know pies were this easy. I should make pies more often.

I bought the jars from amazon that she references.

First you roll out the dough. I did Kroger brand pie crust and rolled it out a little before to try to get more jars out. I got 6 jars out. 
 I did 3 cups apples, 2 tbsp splenda, 1 tbsp brown sugar, 3 tbsp flour, put the lid on the bowl and shook it up to coat.
 Then added nutmeg, tsp vanilla, and cinnamon
 Just the like the recipe says, 1/2 cup of filling each.
 Put the tops on them. Cut to vent.
 I had to bake one right away to test it. Then I realized I forgot the butter. Ur supposed to add 1/4 of tbsp per pie.
 You get to freeze the rest. So you always have pie on hand.
 Bake till golden brown on top.
 If your good you can pop it out of the jar.
 Nom nom nom

Super duper yummy. 
what flavor should I do now? I think i need to experiment with the crumb topping...

Teeny Tiny Peanut Butter Jar Pies

how's it going?
Do you like my new banner?
It has knitting, cooking, sewing and paint represented. I think projects are very important to my well being. I find I get into a bad mood when I am between projects. Some shrink I will inevitably go to later in my life will connect those dots for me. For now all I know is when I am between projects, I am in a bad mood. So time for a new project.
Over the weekend I did a cool project. I made teeny tiny peanut butter jar pies, from the recipe on pinterest. 
 The crust is awesome, pretzels, butter and my personal favorite, brown sugar.
 Make it all melty and gooey and then put in the jars. Bake for like 8 minutes.
 I have no idea why you bake it. It looked the same way going in as it did on the way out, it just hot this time.  
 Then you make the peanut butter stuff. Much easier to do with a stand mixer than with the crappy one I bought. But it did the job.
 Creamy. Buttery. Sugary. Peanut Buttery.
 Then make the Ganache.
 Then mix in semisweet chocolate chips. don't mix in milk chocolate chips that you thought were semisweet chocolate chips because its not the thought that counts here. It seems like it will be okay. Until you put it on the PB stuff.
 If you looked at the link you would see its suppose to sit on top and get hard like a chocolate bar. Not mix in, like mine did.
 Then put lids on and put in fridge. A day later they will get a little harder and be very yummy.
I need a new project. One that won't make me feel fat. Having a dozen of these guys in your fridge really goes to your head. 

I also whipped up a hat yesterday. 

All Done. 

Now what.

Time to get Boomer from Petco, where the Pets go.

Its the Weekend! Lets have a Party

Alex was in town for the first time in weeks, since his summer job is in Cincinnati. So we decided to call it a stay cation.

We didn't make any plans. Just made it up as the day went. We went out to breakfast. We went to the pool. And we cooked. It was relaxing to just be home.

We wanted to use my new grill so at least 1 of the food items had to be grilled.
On the Menu
- Skinny poolside dip - Appetizer
- Sangria - Drink
- Grilled Corn on the Cob - Side Dish
- Cucumber Tomato Onion Salad - Side Dish
- Best Burger Ever - Entree

Skinny Pool Side Dip
This is the skinny poolside dip stolen from pinterest. For a fat free dip, it still had a lot of flavor and good crunch. I served with reduced fat wheat thins. I think its truly a guilt free snack.

Mix Together
1 Red Pepper, 2 Jalepenos (unseeded), 1 can of corn, 1/2 can died olives, 16 oz fat free cream cheese (softend), and 1 packet Hidden Valley Ranch dip seasoning mix.
Serve with crackers
 Sangria
Incredible. Simply Amazing. I followed the linked recipe to a T except for the fruit. I squeezed some lime juice into it and added lemons, strawberries and raspberries. OMG its so good. Will be making this again. 

Grilled Corn on the Cob
 Step 1 - Soak in Water for 30 mins
 Step 2 - Grill, we did it a medium ish, but my grill is cheap so I can't tell you the temperature.
 Step 3 - Grill, turning around various amounts of time. We didn't want to ruin it so we gave these a lot of attention. Cooked for about 15-18 mins.
Step 4 - Put in brown paper bag and roll shut. Cook other things. The steam and the heat in the bag will cook it more. 

Turned out perfect. 

Cucumber Tomato and Onion Salad
I coulda swore I took a picture of this but I guess I didn't. It looks like the picture on the recipe. Its pretty basic. Though next time ill prolly double or tripple the dressing. 2 TBSP of sauce is just not enough. 

Best Burger Ever
So I don't want to steal credit here. This is something I found on pinterest. But it is in fact delicious. 
 Mix these things with ground meat. We used venison, cause I had it, so it was free.
 Make patties. We tried to make them big, so they wouldn't get to dense when cooked.

Cooked burger. On bun. With sauce. Avocado. Lettuce.

oh my it was a tasty dinner.

I'm Back

Hey Blog
   Long time no see. Life happens fast and somehow a few months got away from me. I am working on improving and honing in the content of my blog. I don't know what the goal of this thing is besides being an outlet for myself.

   Don't worry you haven't missed anything. Work is the same. Boyfriend is the same (and gets better everyday). Boomer is still hanging out. School is done. Hobbies are abundant.

    Recently I am made a few knitted creations.
